About Rebekah

Hi! I am a certified teacher who currently lives in Grand Prairie. Growing up in a family of teachers, I grew up being passionate about education.

While earning my degree in Interdisciplinary Studies (Special Education) from Stephen F. Austin State University, I also volunteered to assist teaching in ESL classes. For the past 7 years, I have been teaching and tutoring students up to adults (including ESL) in math, science, English, reading, writing, social studies, and language acquisition.

For many years, I have regularly cooked for people with special diets, food allergies and sensitivities. So, I have experience with finding, creating, and adapting recipes to fit different dietary needs (e.g. gluten-free, soy-free, nut-free, grain-free, corn-free, beet-free, dye-free). In addition to this, I am also trained in cake decorating and candy making.

About the lesson

Learning is an adventure and I greatly enjoy my part in it. Whether it is in a classroom, in a student’s home, in a coffee shop, or taking dictation from a visually impaired college student. I have worked with a wide age range from 4 to adult. When introducing any subject, I prefer to determine a person’s skill and proficiency in that area as part of the first lesson. It also helps me tailor the lessons to each person’s needs; whether buying a curriculum or making one myself.

All people have a basic need to communicate with others. Learning a second language can be as fun as it can be frustrating. For non-English speakers, working and going to school in a primarily English-speaking place can be intimidating. When working with an ESL student, I also look at where they are mostly using English now in addition to how much they already know. For adults and teenagers, it may be their work place, trainings, classes, or a combination. So, I want to address specific English-speaking needs for their workplace as well as their social interactions. For many grade-school and middle-school aged ESL students, most of the English they speak tends to be at school. In addition to learning the material in English, they are still learning their first language at home. For these students I prefer to focus on language acquisition skills they can use to learn any language.

Cake decorating lessons are tailored to each person’s goals, whether decorating cupcakes for a party or wanting to learn skills to start a business. For anyone starting out, I first go over basic equipment as well as food and kitchen safety. Then, I show them how to make their own icing(s), which can include the one used for creating hard decorating candies. When needed, I use icing recipes for specific food allergies (soy, gluten, grain, corn, nuts, beets, food dyes). For those who are new to this part, I also go over where to find ingredients for icing(s) and baked goods in addition to procedures to avoid cross-contamination (allergens getting into the food).
